UPDATE: A vibrant new dining experience is coming to Rochester, as Yuma Fritas prepares to open its doors in mid-December 2023. Located in the former Taco Jed space at 808 Broadway Ave. S., this “Cubanish” restaurant promises to bring a taste of Havana to the heart of the city.
Chef Justin Schoville and Lindsay Zubay of Championship Dining, known for popular venues like Hot Chip and Boxcar Hippie, are spearheading this exciting project. The duo aims to transform the space quickly, stating they just need “the three Ps — paint, plants, and a playlist” to get started.
The opening comes after Taco Jed closed its doors in October 2023, leaving a gap in the local dining scene. Schoville expressed enthusiasm for the location, noting that it’s an ideal fit for their casual dining concept, which will specialize in fritas—Cuban street burgers topped with shoestring potatoes.
Schoville’s culinary journey began with a memorable experience in Miami, where he first tasted fritas. “It’s been an idea that my wife and I have been playing around with for a little while,” he explained. The restaurant will offer a variety of fritas options, including chorizo, beef, chicken, and fish, all served on a toasted egg bun and topped with fresh ingredients like Havarti cheese, bacon, and avocado.
In addition to fritas, Yuma Fritas will serve traditional Cuban sandwiches, including a plant-based version, and a menu filled with Cuban-inspired dishes such as fried plantains and coconut ginger rice. Unique beverages will feature tropical batidos—Cuban smoothies made with guava and mango—alongside a full bar offering classic cocktails like mojitos and piña coladas.
The restaurant plans to employ a team of 20 to 30 staff members, operating seven days a week to cater to the community’s dining needs. Schoville emphasized the importance of creating a lively atmosphere, promising a Cuban playlist that spans traditional to modern hits.
Yuma Fritas aims to fill the gap left by Taco Jed with a fresh, flavorful approach to Cuban cuisine, giving Rochester residents a culinary experience that’s both unique and accessible. As they finalize preparations for the opening, this new establishment is poised to become a must-visit destination for food lovers.
